For professional clogs, like leather Birkenstock clogs with closed back, is it customary to wear socks or no? Would they get sweaty and stinky without socks?

I always wear socks with sandals for that reason, it feels much cleaner and better with socks. If people criticize you, tell them to get fucked.

Could I wear them without socks though? I ask because, with socks, they are a bit tight and uncomfortable. I am just concerned that they might get sweaty and stink.

No. The kitchen is supposed to be a clean place, and wearing clogs without socks seems unclean to me. In a kitchen, closed shoes with socks should be worn.
