He conducted laboratory tests to determine why chicken soup might help colds, beginning with his wife’s homemade recipe, handed down by her Lithuanian grandmother. Using blood samples from volunteers, he showed that the soup inhibited the movement of neutrophils, the most common type of white blood cell that defends against infection. Dr. Rennard theorizes that by inhibiting the migration of these infection-fighting cells in the body, chicken soup essentially helps reduce upper respiratory cold symptoms.
The researchers couldn’t identify the exact ingredient or ingredients in the soup that made it effective against colds but say it may be the combination of vegetables and chicken that work together. The tested soup contained chicken, onions, sweet potatoes, parsnips, turnips, carrots, celery stems, parsley, salt and pepper. The full recipe, as well as the scientific article, are available on the university’s Chicken Soup Web site. The researchers also compared commercial soups and found many of them also had a similar inhibitory effect.

When Rennard set out to determine whether there was any truth to the tales that chicken soup has medicinal qualities, he used an old family recipe - and found encouraging results. But he also found that some store bought soups fared even better
It must be stressed that Rennard did only the one study. He concluded that to draw any definite scientific conclusions, further study would be needed. However, that's unlikely to happen because there's no money to be made with chicken soup.

Studies have gone back and forth for years, and just when we thought the case was closed —a comprehensive scientific review in 2004 determined that daily doses of 200mg (or more) failed to reduce the incidence, duration or severity of the common cold — a contradictory new study surfaced.
The latest report — a 2006 Japanese study published in the European Journal of Clinical Nutrition — showed the risk of contracting three or more colds in the five-year period was decreased by 66% by the daily intake of the 500-mg vitamin C supplement. This study deserves special mention because it was much longer (five years) than the trials reported in previous studies and covered many cold seasons in which subjects were probably exposed repeatedly to many cold viruses.
