Just run them on/in something that can be ruined. And, once the builds are posted on Technet, you can verify the SHA1 yourself. And yes one could brute force MD5/SHA1 checksums, but the data won't be the same. It is pretty much impossible to add malware to it, keep the iso working AND keep the same checksums as posted on Technet.
As for the start menu, I have never used that much, the metro thing I don't need too and booting right in to your desktop is a simple matter of adding the "show desktop" shortcut to the start-up sequence.
