They are usually near deserts. I found a few by taking a boat and exploring along rivers. The first one I found was very small and they wouldn't breed for anything, the next one I found was nice and big and soon I shall rule over a large population.

I did this too. I built them a nice wall and had the roads go out and i added on to their towers and built a little castle and a church (my people are very faithful) and a few houses.
But then I get bored and i knocked off all their doors and blasted them with cannons while they ran from zombies. They all ran into the one house that had a door, and I put TnT in there and set it on fire :c
The only one who survived was the one that lived in the 3x1 pit that I put him in for not getting out of the way when I was building the Court of Arbitrary Justice.

Another good way to find NPC villages are through the superflat maps; if you leave structures on and just keep going in one direction you'll find one.
