What exactly are the advantages of rooting it?
I'm pretty sure the warrenty is gone by now so that's not a problem, but I'd like it to be worth it if I do something like that.

Get the Minichan app.
If you play guitar, download gStrings tuner and GuitarTapp
Gurk is a pretty good free retro RPG
NoteEverything is a good app for taking quick notes
AndChat is a good IRC program
If your phone has tethering capabilities, download EasyTether and if you have a USB cable for your phone you can get internet anywhere (but it's not that fast and can't handle big downloads or anything).
I'm sure there's a bunch of stuff I'm missing, but this should get you started. Also, look around the marketplace and see if there's anything that catches your eye.
