I crashed the car into a pole in the parking lot today. There's not too much damage but it's certainly over the insurance deductible.

I'm tempted to say it was a hit and run to prevent my insurance premiums from going up. Do you think I should wait for a snowstorm or something before calling it in?

Call it in soon, claim hit and run. Make sure there are no cameras in the lot (or nearby buildings) first.

Yeah, I'm going to wait a bit to cool off though. I'm still pretty nervous about it.

Ordinarily I wouldn't hesitate to tell the truth about it, but money is so tight for me right now I don't see any other option.

This is extremely important. Gas stations etc often have cameras. If there are no cameras, there's no risk.

But what if there is a camera. It's a convenience store so it's guaranteed they have cameras, though I don't think they cover the area of the lot I was in. But it's safer to assume they do.

But even if they do, what's the chances it'll get back to the insurance company?

Depends how thoroughly they inspect the claim. Just tell the police that your car was hit by a black camaro in some location far from the store and you should be fine.

This. Its so simple, I should have thought of it, just change the location. But rather than mentioning a the type of car that hit your car keep it simple and just say you didn't see anything.

If it is obviously damage from a pole you ran into (e.g. a big pole shaped dent in your front bumper), risking insurance fraud and filing a false police report may be more trouble than it's worth.
