A lot of e-bikes are pedal-assist ie. the only way for it to work is to pedal; no one button to turn on the motor.

The worst of the energy requirement is starting from dead stop or going up steep hills - human power works ok for that (it's just hiking while on a bike). The 'e' part handles the rest pretty well.
It's a little different from the old moped idea where the engine always runs but a clutch engages/disengages as needed.

there'd be adjustments you could do for how much assist you get, to make the pedalling feel harder or easier in general

you spin motor a bit to get it going and motor then adds torque of its own. probably can also go a short distance under its own power.
