A friend of mine brought me some gator tail meat from Florida. What are your suggestions for seasoning it?

I don't do deep fried foods much, so I was considering baking it.

I've seen that seasoning, but never tried it. Is it really as good as people say?

paprika, garlic powder, onion powder, oregano, thyme, cayenne pepper, salt, and black pepper. Mince raw garlic and rub it on also. Be careful, as gator meat is very easy to overcook and it becomes rubbery.

Yea, I've heard people say overcooking it turns it chewy and makes it taste like shit.

I'll try the seasoning you mentioned.

Since it's wild game, I would get it to 150F, then turn off the fire and let the latent heat take it almost to 160F. Touch it, push it, make sure it has give but is not rubbery.
