Britannica says:
ego death, in psychoanalysis, mysticism, and some religions, the disappearance of an individual's sense of self, or the removal of one's perception of oneself as an entity separate from one's social or physical environment.

since that doesn't make sense, maybe it really means you lose the capacity to think thoughts and all you can do is experience whatever your brain delivers to you
You only think it doesn't make sense because you're used to having it, but actually it's something that develops over time. Babies for example and young children don't understand the difference between themselves and other people.

now how would you know such a thing, how would we know such a thing, really
also that makes no sense -- but I think you are referring to the idea of the capacity to recognize that other beings have minds and agency, something that I sense from any animal that eyeballs another animal compared to it eyeballing a rock. that concept is the badly named "theory of mind", and is not exactly whatever I was trying to infer from "the difference between themselves and other people" earlier, which sounds like simply the capacity to form perception of distinct objects be they rocks or beings regardless.
