When a town or place ends in -ham like, for example, Nottingham, how do you know when to pronounced it like ham, and when too pronounce it like -um? I hear both, but it's different for different places.

Back when I lived in Layatteham-on-Vermilion I was informed by an old man, he must have been about fifty one years old or so, that the correct pronunciation is ham because it was originally from Norman French.
