Mushy peas are naturally a gray color, and don't look appetizing. So restaurants will dye their peas green with food coloring. It looks to me like they've either put too much of the dye they're using, or they're using a different one than most use. They appear to be homemade so they're most likely using cake icing coloring from the bakery aisle instead of the specific pea dye that Chip Shops will use. Mushy peas are generally a nice subdued pastel tone, reminiscent of springtime greenery.
