So you finished that four-year-old package of Thai coconut pieces. Congrats on that, though it sounds like it was a bit of a letdown.
The thing is, people who use up old coconut should know better. It's just not right. And to make matters worse, they're using baker's chocolate as a crutch. That's just lazy. Where's the fun in that? You're basically saying "I don't care about the quality of this coconut, I'll just cover it up with some boring old chocolate". No thanks. Coconut and chocolate are meant to be paired up for a reason. It's like peanut butter and jelly, but way better. The rich flavors of dark chocolate complementing the creamy goodness of fresh coconut... mmmm. Just thinking about it is giving cravings. But hey, when people don't know what they're missing out on, they just keep on doing their own thing. Using subpar ingredients and expecting everyone else to be okay with it. That's just not how it works. If you want to play with the big kids, you gotta bring your A-game. And that includes having a taste for high-quality coconut and chocolate.

happily, I have a package of unsweetened coconut particles and another of hazelnuts. I have roasted the nuts and will grind to particles. They are also around 4 years.
