MOstly because I can't afford food that spoils in a week so my fridge is pretty empty. Pickles definitely go here.

They are not refrigerated at the store when you buy them, so why pre-refrigerate them? Maybe you like cold pickles, which is one thing. I've gotten into making my own pickles, not the cucumber Western style, but Asian style, like Vietnamese, etc. It's actually very interesting and delicious.

Well, for the Vietnamese ones as an example, julienne some daikon radish and carrots. Put them in a solution of white or rice vinegar, water, sugar, and salt. Some of the Chinese, Thai, and Laos ones get more complicated with chili peppers and other root vegetables and spices.
