Copper: https://mauviel-usa.com/collections/copper-sets. For sauces, choose either a big saute pan or an actual saucepan.
Cast Iron: https://fieldcompany.com/products/field-cast-iron-skillet?srsltid=AfmBOopSf3pU7FViA3ezaVypMpmmA4VLhaW_fgjWyqtdFSfw6FFwssTl. Be sure to season it correctly and it will last several lifetimes.
Do NOT get a non-stick pan for your purposes. You want to be able to develop a glaze.(Edited 10 minutes later.)

Copper gear is a good way to get a chef electrocuted in the kitchen, use ceramic cast iron instead.
