Primarily browning meats, sauteing onions/garlic, and making pan sauces. I don't plan to fry much. I'd like to be able to finish chicken breasts in the oven, for instance

I was going to suggest one made out of cardboard and tissue paper, but in hindsight that may not be the best choice. I would definitely stick with a metal one of some kind.

lol you want brand recommendations? Ok I'll do that here. Also, do not get non-stick. you want to be able to develop a glaze for sauces that you can deglaze with wine etc.

Copper: https://mauviel-usa.com/collections/copper-sets. For sauces, choose either a big sauce pan or an actual saucepan.

Also don't get a copper pan for sauces because the acid in the sauce reacts with the copper fucking up your food.
