I'm thinking it's going to make climbing way easier. I'm just not sure if I should buy it in a size for people my height and a bit taller or people my height and a bit shorter.

Works for the bums in my town, they walk over to the college and pick whatever they want from the rack.
I put unicorn tassles on mine to cut down on desirability.

Might have to. My favorite incident was a U-lock holding a quick release wheel with the rest of the bike missing.

I'll keep it inside but work could be a problem. Once a guy just walked past the gate, into the bicycle shed and took a bicycle. So idk, maybe two u locks and a chain?

Chains and locks are usually ineffective against a determined bicycle thief; they exist more to prevent "pick up and pedal" theft. All you'll really be doing by using multiple locks is increase the amount of time locking and unlocking your bike. Ironically, you'll also draw attention to it as a potentially high value item, increasing burglar interest.
