Lumber is a modern invention, carpenters worked with wood long before the exploitation of the forest and the conformity of wood products.

Not in remotely the same way.
A carpenter sourcing flooring from an old growth tree would cut out rectangles but it was use-specific.
Most curved wood, like the hulls of watercraft were carved directly from the natural structure of the trunk to preserve strength and flexibility.
