WWI and WWII never happened either. Those are terms that historians and the media applied to the events afterwards. You could be in the middle of WWIII right now and not even know it.

That's what a world war is. A global conflict. Why do you think "WW3" has to be nuclear? Any major conflict involving a significant number of the world's countries would qualify. It doesn't have to be nuclear. WW3 could be fought with conventional weapons.
Realistically any major power faced with an existential threat during such a global conflict would likely resort to nuclear weapons (or at least the threat), but a "global conflict with no nukes" (which you seem to be getting at) would still be World War 3.
