Asshole didn't make the original list of words you can't say on air, unless you count the "ass" part (shit, piss, fuck, cunt, cocksucker, motherfucker, tits, ass, turd, and twat) and nobody has ever updated the list, so it's stuck.
I think it is because human diseases spread through human waste, so it is a natural instinct to be repulsed by it. Mammal waste is similar, similar enough for many to be instinctively repulsed. But other animal types, for example fish or birds, their shit is too different to have the same visceral reaction.
