Nice! Pair it with raw oysters. Nothing else compares to that pairing. If you don't like them raw, then chargrilled. Good caviar also works. with a Champagne of that quality, it's not worth it to skimp on the accompanying food.

Alright, as for cheese, Champagne does well with strong cheeses or those with nutty flavors. If you can get your hands on some mimolette, it would go well. Can you get your hands on caviar on toast points? It's a classic pairing. As for meat, you can pair Champagne very well with most seafoods.
