How frequently do you sharpen your knives? How frequently do you use your knives and for what purpose?
Which sharpener(s) do you use and any particular tips or techniques you care to suggest?
I have a ceramic sharpening stick and used it to sharpen an old steak knife. It worked and all, but that knife was incredibly dull, so I'm not sure how much that says.
I'm thinking of getting a Spyderco™ sharpening kit because I don't feel confident enough to use the ceramic stick on knives that I care more about. I don't have a good enough intuition on if I'm using and keeping the correct angle. The sharpening kit fixes the angle for you. It also includes two different grit levels.
I'd prefer to sharpen even the knifes I care more about rather than have someone else do it because I think it'll give me a better sense of the steel, the blade, its malleability, defects, and so on.
For example with this steak knife I sharpened, I had never looked at the blade very carefully and noticed all the little bent parts and blemishes that have shown up after years of use. I managed to clean up much of them, but there are some imperfections that remain. Even still, I now know about them and can use the blade keeping the weak points in mind.
Ever since I sharpened this steak knife, I truly cannot go back to my old way of using knives. I will be sharpening my blades myself from this point forward. And I recommend you do the same.

For all my knives, including my professional kitchen knives, I pay a couple hundred. Why not do it myself? I usually do. I have the tools, but I do not have the decades of professional expertise. Once a year, the pro gets an edge that I could never get.

Do you use sharpen your knives every day after cutting butter? Or do you sharpen them once per decade while chopping wood? The answer to both questions matter and neither alone tells us anything.
Just go in and hand in your knives. You haven't earned the privilege of keeping them.
