Pocket knife: Check.
Self-defense knife: Check.
Only thing up next that I need is a knife for offense.
I'm thinking about a dagger or a bowie knife, kept in my waistband. Any other styles or concealed carry strategies are welcomed. If you have any specific brands and models, that's more than welcomed too.

Butter knife is the best. It's useful when you're not fighting, and when you do fight they won't take you seriously so you can easily take advantage of their complacency.

They really ought to have a butter knife style sheath, so you can surprise pull out a dagger or steak-knife style blade.

Any advice on practicing my offensive skills?
I'm thinking I'll first focus on my stealth attacks by jumping out from behind corners on the street and holding a knife to a random pedestrian's throat (at night; I hope this goes without saying). I'll say "give me your money, motherfucker, just give me a fuckin reason" or some shit. When they hand over their wallet I'll just throw it on the ground and yell "SIKE you just got PUNKED, bitch!" and walk away.

Here's my mini axe/knife combo. About 6 inches long and weighs about a pound. The axe blade is about an inch long, but by swinging it, you could put a hurting on someone.

Any idea how old it is? I'm guessing you got it used? My completely uninformed guess is that it's multiple decades old, just based on the wood handle design.
Do you actually use it? Did you buy it unironically?
I never would've imagined putting an axe on the back of a hammer. It's almost like you'd have to want to hurt yourself using that thing.
