To make Halal Gumbo, follow these steps:

Ingredients:

- 1/2 cup olive oil
- 1/2 cup flour
- 1 large onion, finely chopped
- 1 bell pepper, finely chopped
- 2 celery stalks, finely chopped
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon dried thyme
- 1/2 teaspoon cayenne pepper
- 2 halal chicken breasts, diced
- 2 halal chicken sausages, sliced
- 1 pound raw shrimp, peeled and deveined
- 1 can (14.5 oz) diced tomatoes
- 4 cups chicken broth (ensure it's halal)
- 2 cups okra, sliced
- 4 green onions, chopped
- Handful of chopped fresh parsley

Procedure:

1. Start by making a roux. In a large pot, combine the olive oil and flour over medium heat. Stir it constantly for about 15-20 minutes until it turns a dark brown color.

2. Add in the onion, bell pepper, celery, and garlic to the pot. Stir well and cook until the vegetables are softened.

3. Add the salt, black pepper, paprika, dried thyme, and cayenne pepper. Stir well to combine.

4. Add the diced chicken and sausage to the pot. Cook until the chicken is no longer pink.

5. Add the diced tomatoes and chicken broth to the pot. Stir well and bring the mixture to a simmer.

6. Add the sliced okra to the pot. Cover and let it simmer for about 1 hour.

7. Add the shrimp, green onions, and parsley to the pot. Cook for another 5-10 minutes until the shrimp is cooked through.

8. Taste and adjust the seasoning if necessary. Serve the gumbo over steamed rice.

Remember to check all your ingredients to ensure they are halal. Also, you could add or remove any seafood or meat according to your preference, just make sure they are halal. Enjoy your homemade halal gumbo!
