I've never voluntarily been to church in my life. I don't want god or the limits and guidelines it imposes in my life either, and I don't think about it much, so I basically call myself an atheist and get it over with because I'm not a fan of organized religion. But he doesn't know that and I know if I tell him that he'll be more determined to get me there.
He's a nice 30-something hardworking latino guy but I don't know how to just say "no" because he's so friendly about it.

Try going just one and see if he'll accept the fact that you just don't like it? I've tried to get my friends to do things for weeks, but the second they tried it and just... didn't like it, I quietly reverted to my "okay" face.

Seriously, it isn't difficult. Don't be afraid of pushing back. We need to do this. People need to know that you can question religion. You are doing him no favors by being respectful when he isn't.
Treat it like it was someone asking you to go to something non-religious you wouldn't want to go to.
There's no reason to respect his beliefs and tread carefully. He does this same routine on weak people who are vulnerable. He needs to know he is being wrong in harassing you.
