They say a lot of inconsistent things on Star Trek. They travel all around the galaxy all the time so "80 years" is an example of inconsistency. There is no specific canon for how the warp system works, but it's generally agreed that it's definitely exponential and not linear.

Also, it's science fiction. I brace myself for many inconsistencies with science fiction shows like Star Trek.
I'm often annoyed by the universal translator, but it's a convenient device to eliminate the need for subtitles or translators.

That's actually one that the writers have tried to explain. There is a TNG episode written around an ancient humanoid race that "seeded" several planets with genetic material, resulting in most of the humanoid races seen on the show. There are also countless episodes where it is mentioned that different races (e.g. Romulans and Vulcans) came from the same ancestors who split long ago. These aren't great explanations, but they did give those issues a nod and some dismissive hand-waving.
That being said, there really are a lot of instances where they get basic biology astoundingly wrong too. It's not hard sci-fi. It's entertainment. Sometimes it's more about just needing a plot device or convenient reason to move the story along.
