However, there is a small minority of street food vendors and owners of tiny, dingy restaurants, who try to save money by cooking with recycled oil. Now there is nothing objectively wrong with recycled cooking oil. In fact, in the US — the country with arguably the strictest food safety and sanitation laws on earth — recycled cooking oil is deemed legal and safe for use. It is filtered and purified, and is not much different from new cooking oil.
But in China, there is a black market for a certain type of recycled cooking oil called gutter oil, so named because it is salvaged from gutters, trash bins, and sometimes even from sewers. It is collected from any source that contains some cooking oil, which means it can be obtained from discarded animal parts and, yes, human waste. While it is partly purified and refined, it is done so by illegal, underground factories, and the results are far from safe. This gutter oil is known to make people violently ill, and can even endanger their lives in some cases.

Alright, I should be clear about a few things. I do not hate McDonald’s in some sort of evil, visceral way. I am not on some wacko campaign against the company, like José Bové, the French farmer who in 1999 drove his tractor into a McDonald’s and dismantled it along with dozens of fellow protestors. I recognize McDonald’s’ right to exist as a company in the global market. I also believe that people have the right to eat whatever they want, no matter how good or bad. This article is why I, personally and in my opinion, believe that McDonald’s is a terrible company that makes terrible food.
