Yeah, a big fire pit that gets loaded up and burnt down to coals then with a grate or idk if they put the meat in a giant metal container, put a metal slab over it and buried it for like a day. Did I eat barbecued turkey for Thanksgiving one year? It was fucking amazing, meat falling off the bone, cooked just right

Yes, it can be great! The Filipinos do something like that in their adobo roasts, and the Hawaiians do it with pigs. As for what makes it bbq, well, that's sort of a hazy line. Originally, it is a cooking technique used by ancient Americans -- cooking meat over coals or flames. So I guess that is the essence of it: direct heat on meat.

Me? What do you mean? I'm no medical expert, just a guy who barbecues for a living. I don't even have a college degree, but I do pretty well for myself around here.

A barbecue in the middle of winter sounds wonderful actually. Most of the festivities would probably have to be indoors with the grill obviously being outside.
