What if a person has 1 beer every night after work? Are they an alcoholic?

Alcoholism would be a dependency on alcohol - an addiction.

Me neither, but why would they have a glass of beer and not apple juice? You know?

I don't actually do it, but sometimes I feel that way. But I think everyone kind of thinks, Wow, I need a drink this morning.

Alcohol calms you down and makes you feel good. Apple juice might do that, but not in the same way. Relaxing with a beer after work is probably a good thing.
While you might want to keep a reign on the psychological aspects of "I need a beer to relax" and try to go without it once in a while just to prove you can, it's probably not much to worry about unless it tends towards nightly drunkenness, binge drinking, or frequent blackouts. There is a very real physical dependency to alcohol that you probably don't want to experience.

I walk a fine line. The one job that I'm an employee of is all about deadlines (I inspect properties for Wells Fargo), and it's pretty chill in the sense that I make about 1200 a month at it for ~15 hours a week of work. I do remodeling on the side, and right now I'm subbing for a few local contractors as a drywall guy. The nice thing about my work, is that I do it whenever I want, as long as I get it done in an acceptable amount of time. Therein lies the dilemma. I'm making good money, and I enjoy drinking, and since I set my own work schedule, sometimes I plan my work around my partying habits. I still have to be professional, and keep my customers satisfied. I don't drink every day, but I tend to binge drink. It doesn't interfere with my professional or social lives, since I've had to be professional even when partying since a lot of times I'm playing music, but like I said, I've been walking a fine line lately.
