I've looking for horror films about viruses that sicken and kill high amounts of the population, but aren't really Zombie movies

You're referring to the so-called 'infected' subgenre of horror (different to zombie movies). Decent examples are Cabin Fever, Splinter, 28 Days Later, Infection (Japanese film from 2004), The Crazies, Mulberry Street, and Lamberto Bava's Demons from 1985.
