Topic: Nice healthy Afghan potato salad

Image went missingHey, I found this very good recipe for an Afghan potato salad which seems to substitute dressing for butter, egg, and mayonnaise. It looks so delicious I will cook it later today as a breakfast dish.
I'm probably going to be looking more into Afghan and traditional inland middle-Eastern cuisine if this proves to be a success. It seems with their relative lack of oils and dairy products (I assume) they have substituted in vegetable material. In the meantime, stay tuned for camera pictures if I remember.
I don't know why, but this seems so damn good right now. Maybe it's my developing taste for vinegar and salads.

Ya. The pic looks like the cook overcooked the potatoes a little bit or cut them up too small, though. Still looks very good.

I enjoy experimenting with regional foods, but I hardly ever have more than a few of the ingredients required. :/

Oftentimes you'll have to look around for ethnic stores - even Whole Foods and other organic food stores are a bit limited in the more exotic things - though the Internet makes this easier than it used to be. Unfortunately, if they aren't there they just aren't there. One good rule of thumb for cooking is foresight - buy your ingredients planning to make more than just one batch. For example, if a perishable like fresh cilantro or Greek yogurt only sells in large batches and you just need a pinch for your recipe, plan to make something else with it the next day.

That would seem yummy to me if it didn't have cilantro in it. That shit's gross.
I like my potato salad with hard boiled egg whites in it. Rllly good!
