Chinese used to eat with forks, but Confucius argued that instruments of death and war (forks and knives) are not appropriate at the dinner table. Also, Chinese chefs believe that they should serve food that is ready to eat, not a bin chunk of meat that the diners have to carve up themselves to eat.
