For me, it would be the point at which a protestor raises a hand/fist/blunt object/sharp weapon/firearm to someone else, or engages in an unambiguous act of destruction, such as launching a molotov cocktail at any target.
If I witnessed any such action, I would immediately flee the scene.

If you're killing people and committing arson, it's a peaceful protest. If a guy in a viking helmet steals Nancy's podium, it's a riot.
