Been a while since I've used it but I see they've now copied the feel of OSX by doing away with the task bar and having the menus fixed at the top of the screen.

Will gnome ever innovate in any way or is it just stuck at being a walmart-tier OS which just copies the market leader?

It;s called themeing. Vanilla gnome doesn't look like anything, its POS. Stop using Ubuntu and install a real OS like Gentoo or Plan9.
