I want to get my gma a kindle for Christmas this year but she's really bad with tech, I need something easy to hold, fairly large, and without ten million options that will frighten her.

The older Kindles are very straightforward, they just show you a list of the books you have. The new ones are a bit weirder, I wouldn't recommend them as much. However, she'll be somewhat limited by format (kindles don't support the format most libraries lend e-books out in, and your mum presumably won't want to fuss with file conversion).
I haven't used other e-readers.
