As someone who has trouble staying above "underweight" territory and eats primarily breads and pastas, (seriously, I have been described as a "starchavore") I feel like the gluten free diet and the paleo diet are just weird aftershocks of the Atkins craze. I don't know. People have different metabolisms.
FODMAPs are maybe a thing; maybe they are to blame for some discomfort? (just mild discomfort, not your immune system actually destroying your body like people with an actually life-threatening autoimmune disorder) I think that all you can do is eat what works for you. But... if some product advertised "50% more gluten then leading brands!" I would sooo buy it in a heartbeat at this point. I sort of resent the culling of gluten from my diet by overzealous marketers responding to a trend.

actual Celiac sufferers have a range of new options, and that is probably a good thing. But
actual Celiac sufferers now have to deal with crazed advertisers that want to slap "gluten free" onto anything (Seriously, gluten free toothpaste? I saw that. It's a thing.) without fact checking it too much. That carries a danger with it too: like how companies have to alert people with nut allergies that such-and-such food is processed by equipment that also processes nuts. That didn't always happen and some random people would suffer anaphylactic shock after ingesting some product that had trace amounts of peanuts or whatever. That's the danger of hurriedly branding things "100% gluten-free" for advertizing purposes. And that's sad. Personally, I say a gluten free option is fine, but, for me, bring on the gluten! I fucking love it!
I don't care for grains much, any of them. I use wheat flour to make fried chicken and eat a few Hostess fried glazed fruit pies a day.
